Do not pick stalks the first year after planting. The second year, pick for about 2 weeks. The third and following years, pick for about 6 to 8 weeks, or until the stalks become small. Pull only the large stalks, leaving smaller ones to grow. Never pick more than two-thirds of the stalks present on the plant. To pick, hold the stalk near its base and pull toward one side until it breaks. Do not cut. Discard the leaf blade.
